Vinegar doesn't need refrigeration due to its high acidity, which acts as a natural preservative. Once opened, vinegars typically last from one to three years, depending on ingredients and acidity.   • If you notice something floating in your vinegar, it’s likely the mother of vinegar, a naturally occurring gelatinous substance made of cellulose and acetic acid bacteria formed during fermentation. It may appear cloudy or stringy, but this indicates high-quality vinegar. You can choose to strain it out or leave it in for added flavor benefits.   • Not all of our vinegars are gluten-free, but we have many delicious options! Our Wild Blueberry Vinegar, Cranberry Vinegar, and Fruit & Flour Vinegar are gluten-free. If you see "beer," "ale," or "stout" in the name of a vinegar, it contains gluten. We clearly label this information on our packaging.   • Our vinegars are naturally fermented and may contain trace amounts of alcohol (less than 0.5%), which is a natural byproduct of the fermentation process. During fermentation, yeast converts sugars into alcohol, which is then transformed into vinegar by Acetobacter bacteria. Our process is specifically designed to convert as much alcohol into vinegar as possible, but trace amounts may remain. This trace amount is well below the level considered non-alcoholic by federal standards and is negligible, making our vinegars safe for all ages. However, if you have specific dietary restrictions or sensitivities, we recommend consulting your doctor.

  • Great question! Our vinegars do not have added sugars. We use a two-step fermentation process to create our vinegar, starting with a wine or beer from local ingredients. Yeast ferments natural sugars into alcohol, which is then converted into vinegar by acetic acid bacteria. For some recipes, particularly with less sweet fruits like rhubarb or cranberries, we may add a touch of maple syrup to increase the available fermentable sugars to an acceptable range. This step is essential for achieving the desired alcohol content and ensuring the final acidity of our vinegars is consistent and at legal levels.

  • Our vinegars haven't been specifically tested for sodium content, but vinegar is generally considered a sodium-free food, containing less than 5 milligrams of sodium per tablespoon. What does the sticker on the bottom of the bottle mean?

The sticker on the bottom of our vinegar bottles contains important information regarding quality and compliance. It allows consumers and retailers to check for freshness. To read it, start with the first three digits, which indicate the month and day of bottling, followed by a two-digit year. The last three digits represent a unique batch code for recall management. Our vinegar is good for at least four years after the bottling date if unopened and stored properly. After that, we recommend checking the quality before use.
