Maple Vinegar is made with maple syrup from Sawyer’s Maple Farm in Jackman. We ferment the syrup into a robust stock that ages in oak barrels over the summer and fall, before the transformation into vinegar during the long winter. The resulting vinegar is sharply acidic, balanced by a touch of maple sweetness. Pair with mustard for vinaigrettes, brighten rich seafood preparations like salmon, or use to make crisp, refreshing pickles.
